Don’t worry if the barman ignore you for a while – this is a typical Spanish test to see if your made of strong enough stuff to merit the experience. A classic street based joint, La Fresquita is a fairly local affair – serving traditional Sevillian dishes alongside the usual beer and wine list. Once you’ve negotiated the gruff waiters, this is a great place to chat all things Betis, or which bank will go under next.

You have most likely been avoiding the Caracoles (snails) until now but they are an essential part of Sevillian food culture so you may as well get stuck in and decide once and for all if they’re for you. When you receive your bowl give it a good stir until all the caracoles are completely smothered in oil and juice. Pick the easy targets first and just pull them out with your teeth. To attack the ones that are a little more shy make a small crack with your teeth about 5mm into the shell and suck them out of the main entrance. And if your really stuck you will probably be able to find a toothpick to dispatch the rest.

A final note – don’t think you are being ripped off when you receive half a glass of cerveza, this seems to be the ration here and after ten minutes sipping in the evening heat you begin to understand why!
